Indonesian Food : Moon Cake Recipe

This year, the Autumn Festival or in Chinese 'Zhong Qiu Jie' falls on Tuesday (21/9). This festival is also called the Moon Cake Festival because the celebration cannot be separated from serving moon cakes.

This cake is cylindrical in size, and its thickness varies. The cake filling includes lotus seeds, meat, red beans, then the modern one is chocolate, vanilla, or ice cream. Mooncake fillings vary by region.

As reported by Taste Asian Food, basically mooncake ingredients consist of four elements, namely, golden syrup, water lye, vegetable oil, and flour.

The gold syrup is a mixture of fructose and glucose. It is usually made from ordinary sugar heated with lemon juice. But you can get it from the supermarket or replace it with honey.

Then lye water (kansui) is water with alkaline content and neutralizes the sour taste of golden syrup. It can also be replaced with boiling water with baking soda. According to Gimme Yummy, for 240 milliliters of water, you need 1/2 teaspoon of baking soda.

Here's a recipe for moon cake or mooncake.

Material:

  • 65 grams of golden syrup or honey
  • 20 grams of canola oil
  • 100 grams of special flour for cakes
  • 1/4 teaspoon lye water
  • Beaten eggs for greasing

Stuffing:

The filling can be a chocolate paste, lotus seed paste, egg yolk.

How to make:

  1. Prepare a bowl or mixing bowl, knead flour, golden syrup, lye water, and canola oil. Knead manually or with an electronic tool. Cover the dough tightly and put it in the refrigerator for 40 minutes.
  2. While resting the dough, make the cake filling into a ball. Set aside.
  3. When everything is ready, shape the dough into a ball twice the size of the stuffing circle.
  4. Using parchment paper, sprinkle with flour, and then start filling the dough with the prepared filling. Make sure the dough covers the filling.
  5. Prepare the mold and place the dough that already has its contents. Repeat until the dough runs out.
  6. Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius). Bake the cake for 5 minutes.
  7. Remove from oven and brush with beaten egg. Return the cake to the oven and bake for 8-10 minutes until golden brown. The cake is ready to be served.
